Cellar Door Analytics and Customer Profiling
A seminar exploring the use of visitor analytics systems to profile wine tourists and guide cellar door experience development and measurement.
Wineries can attract a diverse range of visitors, each looking for a tailored and unique experience. Using visitor tracking analytics and customer profiling it is possible to develop a wide range of activities and experiences and test their effectiveness and impact on cellar door ROI.
Using insights and techniques developed through their Wine Australia-funded research project, Dr Ben Thomas and Associate Professor Jeremy Galbreath will deliver a seminar on how wine producers can tier their cellar door service offering and maximise the value delivered to a range of different customer segments. Topics covered will include:
- An overview of different wine tourist segment profiles
- Ways to tier your service offering
- Effectiveness of each service offering as a revenue stream
- Impact of charging for wine tastings
- Ways to implement data collection and cellar door service offering optimisation

Chardonnay winemaking trial and Cabernet clone tasting
Margaret River producers are invited to join Richard Fennessy taste through two trials from the 2021 vintage. The Chardonnay winemaking trial consists of a parcel of Margaret River Chardonnay split into 12 different winemaking treatments. These treatments include skin contact, two different yeast strains, wild ferment, high fermentation temperature, light solids, heavy solids, low diacetyl MLF, high diacetyl MLF and deacidification.
The Cabernet Sauvignon clones are the first crop from a trial block grafted in 2019 of 14 different clones and selections onto 25 year old SA126 Cabernet vines. The clones/selections were all harvested on the same day and made into small-lot wines using a standard winemaking procedure.

ASVO Oenology seminar
Constant changes in markets, consumer preferences, regulation and lifestyles require winemakers to continually adapt and innovate to maintain their edge. This seminar will feature experts from all sectors of the industry presenting the latest information and case studies on how challenges can be converted to successes.
Major trends in the beverage market are towards new formulations providing new flavours and colours, and meeting consumer preferences around wellness and healthy lifestyles. Some producers are also responding to demands from a growing number of consumers for products that are low- or no-alcohol, or that carry sustainability credentials, including organic or other differentiating features. There are also opportunities to increase efficiency in winemaking, for example through robotics, artificial intelligence and better data management.
The program consists of three session:
- Changes and trends; the shifting winemaking goal posts
- Being brave enough to make change – pushing forward to embracing risk
- Celebrating success – identifying problems, change management and innovation adoption

AWRI webinar program
